Protein denaturation happens when the protein structure is altered due to heat, pH changes, or mechanical stress. This does not destroy the protein, but it may affect its function and digestibility. For example, cooking is a method to make meat protein more digestible.
WPI is spray-dried under a heat condition, so there could be some denaturation of protein. However, this does not reduce the protein’s amino acid content or its ability to support muscle growth and recovery.
